This baby potato recipe is an easy way to prepare baby potatoes. They are perfect for grilled meats, roasted chicken, and even roasted white fish such as cod or halibut. The mild flavor of new potatoes blends perfectly with brown butter, herbs, and garlic. This potato side dish recipe will prove particularly handy during the holiday season!

How to boil baby potatoes
Nothing is simpler than boiling potatoes! Soak baby potatoes in a large pot with cold salted water, then boil for 8 to 10 minutes or until fork-tender. Drain the water, and let the potatoes dry up.

Directions
1.To make the boiled baby potatoes: Place potatoes in a pot of salted water and bring to a boil for 10 minutes or until fork tender. Drain the baby potatoes and allow them to steam dry for 10 minutes or until the butter sauce is ready.
2. In the meantime, melt butter in a large skillet over medium heat. As it begins to foam, keep gently stirring with a wooden spoon as the butter turns to a light brown color. Once you see the butter turning a deeper brown color, it will release a nutty aroma. This is when your butter is properly browned. You should see tiny dark bits in the bottom of the skillet.
3. Once the butter is browned, add in garlic and fry for one minute, then stir the juice of half a lemon, parsley, chives, and salt and pepper to taste. Add the boiled potatoes and give them a good stir to coat them well in the brown butter sauce.
4.Transfer the boiled baby potatoes to a serving platter and pour over any leftover sauce from the skillet and garnish with extra parsley. Enjoy! ❤️

Tips for the boiled baby potatoes recipe
- Put new potatoes in cold salted water that you’ll bring to a boil. If you throw your potatoes in boiling water, they cook way faster on the outside and undercook on the inside. So get potatoes to the right, even temperature by using cold water.
- If potatoes are not regular in size, cut the largest in halves. This way, your potatoes will cook evenly at the same speed.
- Pierce a potato with a fork to check doneness. They should be pierced easily but keep their shape.
What kind of potatoes should we use?
We found a mix of Yukon gold baby potatoes, red potatoes, andPeruvian purple potatoes works great. You can find them year-round in the grocery store or pick them up at the farmer’s market in late summer and fall. Of course, you can use only Yukon gold baby potatoes or baby red potatoes.
How long does it take to boil baby potatoes?
The boiling time for baby potatoes can vary depending on the size of your baby potatoes. Small baby potatoes can be done as quickly as 8 minutes, while larger new potatoes can take up to 15 minutes or more. If unsure, test the potatoes for doneness by piercing them with a fork and cook until they are fork-tender.
What can we add to the boiled potatoes?
To make the boiled baby potatoes a more substantial side dish, add crispy bacon bits or freshly grated parmesan as an excellent garnish. Additional herbs such as dill or tarragon are also great.
How to keep the baby potatoes leftovers?
You can keep the baby potatoes leftovers in an airtight container for up to 4 days in your refrigerator. Reheat covered in the oven, microwave them, or pan-fry them until heated through, or enjoy the baby potatoes cold in your salads.
